To fry properly, be it deep-fat-frying or immersion frying it is important to use a good quality oil or shortening. As well as being a means of transferring heat, oil is a food in itself with its appropriate nutritional characteristics.
Good frying oil should have the following properties:
During the frying process of snacks water is lost through evaporation from the surface of the food, resulting in a certain amount of absorption of the frying oils. This oil should be stable so that the end product doesn’t become easily stale or rancid and the consumer is able to appreciate the product’s flavour, which is improved by the flavour of the oil.
