Dairy foods

Dairy foods are products derived from milk: milk, yoghurts, cheese, cream, ice cream, caseinates, etc.

In the present day “Dairy Foods” does not necessarily only refer to milk products. In the last decade numerous products have been developed based on vegetable oils and fats.

Why use vegetable fats?

  • Vegetable products unlike animal products contain less cholesterol.
  • The production costs for vegetable products are less than those of milk.
  • The profile of fatty acids of a product can be specified during its development.
  • Vegetable fat has greater stability than milk fat and can support temperature changes during processing and storing without becoming rancid.
  • Lower content of trans isomers. Milk has a natural content of trans fats.

These products can be used in all types of vegetable creams; they give creaminess, texture and body to the end product.

Products worth mentioning are double cream, single cream and whipping cream.
